De Martino Viejas Tinajas Cinsault is a superb natural wine made with a traditional process that the winery has resurrected. The wine undergoes a natural and gentle fermentation in centennial tinajas, or large earthenware jars, with no outside intervention – a technique unique to the mountainous Itata Valley region. Strong perfume of red berries, citrus peel and violets. A beautiful balance of intense fruitiness and pleasant acidity, with complex, smoky granite notes for a lingering finish. Excellent to enjoy now, or over the next 10 years as its structure and ripeness of fruit develop further complexity. A fresh, juicy red for a hot summer's day – take it for a picnic with a green salad, mixed cold noodles or hand-shredded chicken.
