With 90% of the grapes in this wine hailing from the renowned subregion known as "The Golden Mile", here's a wild-fermented Riesling that's pure, delicate and clean! Fine floral aromas with lime leaf, lavender and lemon pith, with bath salts and minerals at its core. Brimming with classic Clare Valley citrus notes, distinct chalky, mineral texture on the palate and great acidity. This wine pairs brilliantly with alllll of the dumplings (har gow are a must) – we love it with dim sum brunch after a big night out, or with smoked salmon rillettes! A bottle that can also be cellared for up to 10 years to add some complexity and intrigue.
