It hails from the heart of the Languedoc vineyards, where the estate's soils hide traces of ancient lagoons with fossilised mussels and oysters, letting the vines' roots grow deep – pretty neat! This wine is expressive and slightly peppery with aromas of cherry and violets, with lots of fruit on the palate and supple, delicate tannins. Cook up some Cantonese braised beef with daikon (maan ngau nam) or creamy fennel and potato gratin and call it an excellent evening! Certified organic and vegan-friendly.
