As far as top-rated Chardonnays go, Soumah Equilibrio sits pretty much up there with the upper echelons in this category (we also know that from their current Cathay Pacific First Class listing). Ultra-elegant with its complexity and interesting blends of flavours, this is what many call a ‘smashing’ wine! Gorgeous notes of white flowers, nectarine, lemon rind, and grapefruit interlaced with toasted hazelnut and vanilla candle by the fireside. Tastebuds get a real tickle from the creaminess of a custard apple, the juiciness of a ripe pear, the sweetness of white peach with touches of flint, toffee and almond brittle. A lingering yet refreshing finish. Meticulously crafted in its second vintage only, we’re lucky to get our hands on this in Hong Kong as only several cases are produced! A soft but bold wine that pairs perfectly with a crab cakes with creamy tartar sauce or a rustic aubergine pilaf with crispy haloumi.
